Springtime Cocktail (Thyme Infused Rosemary GreyHound)

It's everyone's favorite time of the year. Springtime! That time of the year down here in New Orleans when we start walking around the neighborhood, getting to know the city all over again. And with that comes the revival of New Orleans front porch cocktail time. It's one of my most favorite things about the city. Now I say cocktail... but any cold beverage really. Sweet tea, cold local beer, lemonade, all acceptable as long is its out on the front porch, because as we know, our spring is a real short one and in the summer it's almost impossible to set outside even at night!

So Im a cocktail guy and given any chance I will jump at the chance to make cocktails for my friends and I. (I have beer too) Now, choosing the right springtime-porch cocktail shouldn't be too difficult, just keep it lite and simple. When we think of souther a lot of people think whiskey/bourbon, but for this cocktail I will be focusing on something a little lighter and an infused syrup to add that something extra.

Thyme Infused GreyHound

for the thyme simple syrup

2 cups water

2 cups sugar

10 sprigs of fresh thyme

combine all ingredients in a sauce pot, bring up right to a boil (do not boil)

set on counter and let infuse for 2 hours. strain and place in a air tight contaier.

store in air tight container up to 3 weeks

* you can also add thyme to your Vodka and infuse up to 4 days strain and follow recipe below *

for the cocktail

2 oz vodka

.25 oz thyme simple

4 oz fresh squeezed grapefruit juice

Place all in a shaker add ice, shake, pour over ice into a highball.

garnish with thyme sprig
